Certified Free Range Happy Chickens and Milawa Organic Whole Chicken

We source our Free Range Chicken from  pioneers of RSPCA Approved chicken in 2011. Our farmers obsession with producing the best chicken Australia has to offer sees us continue to strive for excellence in everything we do.

Across our farming, hatching and processing business, we sell free-range chicken RSPCA Approved chicken. Our farmers lead the market in this regard, and many other suppliers are only now catching up. RSPCA requirements include specific perching, lighting, feed, shed densities and record keeping. Chicken in RSPCA approved barns can perch, dust bathe, scratch and play with toys.

The RSPCA auditing system continues beyond farming into production to ensure high animal welfare is maintained and traceability has integrity for consumer confidence. Initially the RSPCA audited every barn at three-month intervals before providing decertification. Audits eventually moved to an annual basis.

Today free-range birds have the ability to forage naturally and instinctively amongst grasses, weeds, bushes and trees in a secure environment. Their diet is supported with locally-supplied multi-grains, blended with spice extracts and essential oils, creating happy, healthy and tasty chicken.

Our farmers were the first poultry producer in the southern hemisphere to implement Aeroscalding – a process prior to plucking that retains all skin layers, reduces cross contamination and microbiological load, and results in better tasting chicken.  They were also among the first to implement Air Chilling, a process we are strongly committed to – which reduces the moisture content in poultry, meaning you pay for protein not water – and it has a much better shelf life than those who exclusively deep water chill.

FREPA

The Free Range Egg and Poultry Association (FREPA) mandates standards for free-range poultry farming. Our farmers were among the first meat poultry producers to receive free-range accreditation in Victoria. FREPA conducts an annual audit on the farms to the FREPA standard and farmers are recertified every 12 months.

Antibiotic Growth Promotant (AGP) – Free

Since 2012 our farmers have been completely AGP free across our whole operations. We are very proud of this fact.

Our farmer was named after the original farmhouse, which still stands proudly on one of the main properties today.

Farmed in the Riverina and the Northern Grampians, St. Bernard’s free-range pork is produced with the philosophy of ‘only the very best will do’.

At St. Bernard’s we are Certified Free Range, meaning that the farmers meet the Australian pork industry’s rigorous quality assurance standards. Our Farmers embrace the principles of HACCP following the Codex Alimentarius codes as the basis for our food safety plan. We are committed to building quality into our processes and maintaining systems throughout our business that conform to the requirements of ISO9001:2015.

Our Farmers also are certified to Coles, WQA, Halal, NASSA Organic, AusMeat standards, AMIC Animal Welfare and have PrimeSafe and AQIS registrations.

ISO9001:2015 gives our sourced farmers an internationally recognised Quality Assurance System Certifications. To obtain these achievements has required an intense focus from our workforce and management. Our farmers are very proud that it was one of the 1st domestic abattoirs to have its ISO9001 certification. Since then they have achieved many other certifications due to our commitment to best practice procedures.

We see this as a demonstration that our farmers are within the elite front-runners of the industry in relation to Quality Assurance. There is a constant drive for improvement in the Quality System to ensure we supply our customers with products that exceed specifications and are fit for purpose.

Our farmers have also incorporated Animal Welfare into their Quality System, as they have adopted best practices for handling livestock within the industry. Accredited animal welfare officers are onsite to monitor these processes. Our farmers are driving the paddock to plate approach to food processing by maintaining standards through every step of the process.

Our Farmers natural 100% grass fed beef is selected from our farms located across Victoria in the Goulburn valley, Western Districts, Victorian Highlands, Gippsland, and the Surf Coast regions. The result is a tasty juicy tender experience.

The Australian Food Awards (AFA) is Australia’s leading national food awards program, conducted by the Royal Agricultural Society of Victoria (RASV).

The Australian Food Awards builds on the success of and replaces RASV’s Royal Melbourne Fine Food Awards (RMFFA) program, offering broader opportunities for Australian producers to leverage success locally and internationally with the AFA’s national brand seal of quality.

The AFA presents producers, large and small, with the chance to benchmark their products, establish their credentials in the Australian premium food industry and provides differentiation in the market for award winners.

The Awards recognise the best Australian food products and produce across eight major categories, including Dairy, Meat, Poultry, Seafood, Fresh Produce – Truffles, Grains and Pulses, Pantry Goods and Convenience Foods. Our farmers were the Silver Medal winners in 2019, branded Beef, and Bronze Medal winner in 2016, best branded Beef.

Meet Stephan Muller
The Wursthütte owner since 2013.

Old Werner Muller started the Wursthütte Butcher Shop in Malvern more than 35 years ago. His goal was to produce the most authentic sausages for his Australian customers. His quality standards were extremely high. The Wurst (sausage) had to be so perfect that you could sell it in any European butcher shop from Zurich to Vienna. Werner’s nephew, Stephan Muller, arrived from Luzern Switzerland thirteen years ago to help out his uncle. He always wanted to learn this traditional craft from him. Stephan, a sixth-generation Butcher, later became the owner of the Wursthutte in 2013. Today, Stephan continues the family legacy in a very competitive market.
